Classic Creamy Coleslaw for Two 🥗

Ingredients

  • Coleslaw Mix:
    • 2 cups shredded cabbage (green or a mix of green and purple)​
    • ¼ cup shredded carrots
  • Dressing:
    • 2 tablespoons mayonnaise
    • 1 teaspoon apple cider vinegar
    • ½ teaspoon Dijon mustard
    • ½ teaspoon sugar (optional, adjust to taste)​
    • ¼ teaspoon celery seeds (optional)​
    • Salt and freshly ground black pepper, to taste​

Instructions

  1. Prepare the Vegetables:
    • In a medium bowl, combine the shredded cabbage and shredded carrots.​
  2. Make the Dressing:
    • In a small bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, and sugar (if using) until smooth.​
    • Stir in the celery seeds (if using), and season with salt and pepper to taste.​
  3. Combine:
    • Pour the dressing over the cabbage and carrot mixture.​
    • Toss well to ensure all the vegetables are evenly coated with the dressing.​
  4. Chill (Optional):
    • For enhanced flavor, cover the coleslaw and refrigerate for at least 30 minutes before serving. This allows the flavors to meld.​
  5. Serve:
    • Give the coleslaw a final toss and serve chilled as a refreshing side dish.
