Ingredients
For the Buttermilk Biscuits
- 2 cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp baking soda
- 1 tsp salt
- 6 tbsp cold unsalted butter, cubed
- ¾ cup cold buttermilk
- 1 tbsp honey (optional, for slight sweetness)
- 1 tbsp melted butter (for brushing on top)
For the Sausage Gravy
- 1 lb ground breakfast sausage (pork or turkey)
- 2 tbsp butter
- ¼ cup all-purpose flour
- 2 ½ cups whole milk
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder (optional, for extra flavor)
- ½ tsp crushed red pepper flakes (optional, for heat)
Instructions
Step 1: Make the Buttermilk Biscuits
1️⃣ Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
2️⃣ In a large bowl, whisk together flour, baking powder, baking soda, and salt.
3️⃣ Add the cold cubed butter and cut it into the flour using a pastry cutter or your fingers until the mixture looks like coarse crumbs.
4️⃣ Pour in the cold buttermilk and honey. Mix gently with a spoon until just combined (do not overmix).
5️⃣ Turn the dough onto a floured surface, gently fold it over 3-4 times, and pat it to 1-inch thickness.
6️⃣ Cut out biscuits using a round cutter or the rim of a glass. Do not twist the cutter—press straight down for fluffy layers!
7️⃣ Place biscuits on the prepared baking sheet and brush the tops with melted butter.
8️⃣ Bake for 12-15 minutes, or until golden brown on top.
Step 2: Make the Sausage Gravy
1️⃣ In a large skillet over medium heat, cook the ground sausage until browned. Break it into crumbles as it cooks.
2️⃣ Add butter and stir until melted.
3️⃣ Sprinkle in the flour and stir continuously for 1-2 minutes to cook out the raw flour taste.
4️⃣ Slowly pour in milk, stirring constantly to prevent lumps.
5️⃣ Add salt, black pepper, garlic powder, and red pepper flakes (if using). Stir and let the gravy simmer for 5-7 minutes, until thickened.
6️⃣ Taste and adjust seasoning as needed.
Step 3: Serve & Enjoy!
🔹 Split open the warm buttermilk biscuits and smother them with sausage gravy.
🔹 Garnish with a sprinkle of fresh parsley or black pepper for extra flavor.
🔹 Serve hot and enjoy with coffee or sweet tea!
